Ear infection

Poor Bailey has her first (and hopefully last) ear infection. We went to the doctor today after 3 nights of no sleep and found the cause. We have drugs now, though she spit the first dose all over her cute shirt and white pants. Why they don't do white or clear medicine for babies is beyond me. Oh well. Hopefully after this weekend, she'll start feeling better and Aaron and I can get a little sleep.

This picture doesn't make it seem like she's very sick, but i thought it was too cute not to share.

Chicken Artichoke Heart Soup Recipe

My boss (and friend) told me about a recipe site on KSL.com and I found this yummy chicken artichoke heart soup recipe and thought I'd share. I'll try to post some of my favorite recipes as I come across them.

Chicken Artichoke Soup

Ingredients:
1 large or 2 small shallots, chopped
10 cremini mushrooms, sliced
1/2 c. butter
2/3 c. flour
32 oz. chicken stock
1 quart half and half
1 lb cooked, diced chicken
1/2 lb chopped, cooked bacon
1 jar artichoke hearts, chopped
8 oz. Swiss cheese, chopped
1 1/2 c. Parmesan cheese
1 T. salt
1/2 T. freshly ground pepper
1 T. Italian Seasoning
1 t. garlic salt

Melt butter in a large pot. Sauté shallot and mushrooms, until soft. Sprinkle in flour and cook 1-2 minutes. Slowly whisk in stock. Bring to a boil and thicken. When thick, stir in chicken, half and half, artichoke hearts, bacon, cheeses and seasonings. Stir until cheese is melted. Season to taste. Serve with topping below:

Topping:
Ingredients:
1/2 c. panko
1/2 c. parmesan cheese

Combine and cook in a 400 degree oven for 8-10 minutes until browned. Sprinkle on bowl of soup right before serving.

Atlanta and colds

Aaron took off for Atlanta on Sunday. He is speaking at a WERC (pronounced "work") conference. He texted me a little while ago and said he presentation went well and he didn't run out of time like he originally thought. Yeah!! I am so proud of him. This was a great accomplishment for someone who feels he struggles with public speaking.

GREAT JOB AARON!!!

He was also able to catch an Atlanta Braves game, in the VIP section. Lucky!!

Everyone in the family, except Aaron, has a cold. We are really good at sharing, apparently. Poor Bailey is coughing and just seems miserable. It has been a rough couple of days for her. The worst part is that she has a runny nose and any mom out there knows how much babies love having their noses wiped. Hopefully she gets over this in the next day or so. (The rest of us can handle a little cold.)

The Easter Bunny Visited

We had a great Easter this year. The kids loved coloring eggs, both at home and with Grandma Jenkins. We really enjoyed getting together with the families and stuffing our faces. It's amazing how I can be so full and still have room to stuff down a cupcake or two. :-)

The girls loved hunting for eggs at Grandma Great's and at home. The Easter bunny hid some eggs in hard places. As a matter of fact, one egg stayed hidden until bedtime when Shelby finally saw it. The girls looked adorable in their Easter dresses and even let me take a few pictures.

Now we need to get rid of all the candy. I had to move it off the counter by the stove over to the counter by the microwave, because it kept screaming at me to eat it. Luckily I have been pretty good at resisting. The girls, however, are having a harder time. Aaron is lucky that he doesn't really crave chocolate. How nice would that be?

Well, as always, here are some pictures from the day. Hope you all had a wonderful Easter and are enjoying better weather than the 6 inches of snow we got last night.

Peace out!

Aunt Nelly came to visit

We were very excited to spend Saturday with Aunt Nelly from Oregon this past weekend. Janelle came down with her friend Lorinda (sp?) and Lorinda's son Kyle to attend the afternoon, Sunday session of conference at the conference center. They were lucky enough to score tickets there.

They got in to town Saturday morning at 6 am. We were over to take them to lunch by 11:30 and spent the rest of the day hanging out. The whole family got together at Dad's house for pizza and salad.

Then while the guys went to the priesthood session, the girls and kids went to Roberts and had a blast with their girls night out fun. Parker won a prize by standing on the right number. Everyone made cards or tags and the kids made geckos out of beads and string. I didn't think it was going to be much fun, but we really had a great time. And it kept all the kids busy for the 2 hours until it was time to go back to dad's house for banana splits. Talk about yummy!!!

We really enjoyed seeing Nelly and hope to see her soon. Here are a few pictures we took from the weekend.

Chan and Nelly (I still don't think we look anything alike)

The nieces and nephews making a goofy face for the camera
We took 3 pictures and couldn't get Gretchen to make a straight face. What a goof-head.

and of course, a cute picture of Bailey!

My Treadmill is coming!!!!!!

I am so excited!!!! Aaron ordered my treadmill last Thursday and it is only suppose to take a week to get here! (yes a week, but it was free shipping, so who's complaining....) I am looking forward to running without having to leave the house!!! And, I won't feel as guilty about being gone so much from the kids. Plus, it's climate controlled, so I can work out even if it is snowing in April!!!!!

50's Dance at school

Friday, 4/3/09, was the daddy - daughter dance at school, which they themed 50's night. Gretchen was so excited about it and talked about it every day. They even tried on their outfits on Tuesday night, just to be sure everything fit and they knew what jewelry to wear.

On Friday, I got home to find the girls dressed and Aaron looking like he was part of the cast of Grease. He was adorable!!!! He had a white t-shirt, with the sleeves rolled, jeans and his black dress shoes. His hair was slicked and he wore his black leather jacket to make him look really cool.

Shelby had on the poodle skirt that Grandma Jenkins made her the year before and a white shirt. I helped put her hair back in a pony tail with a long white ribbon. the out fit was completed with a pair of white socks and tennis shoes. With her glasses, she reminded me of Patty Simcox, the overly happy girl from Grease.
Gretchen went with a more traditional dance look and put on a black and white dress. It wasn't 50's, but she sure looked cute. Oh, I forgot to say that she wore tennis shoes as well. :-)
Bailey and I stayed home while the other three danced the night away, at least until 8 pm, when the dance ended.
