Warning - Very fattening recipe: :-)
A co-worker makes this dip for most of our office parties. It is wonderful in a crockpot and you serve it with tortilla chips. YUMMY!!!
SAUSAGE DIP
3 lbs Jimmy Dean sausage (I season with 2-3 TB cayenne pepper)
3 lbs cream cheese
2 c sour cream
1 can (4 oz) diced Jalapenos (Ortega brand is good)
2 cans (7 oz) diced green chiles
1 large onion (diced)
1 large red bell pepper (diced) (optional)
1 large tomato (diced) or 1 can diced tomatoes (optional)
Brown sausage in a large frying pan (do not drain the grease, this is not a low fat recipe anyway). Add all of the diced ingredients (onion, jalapenos, chiles, bell pepper & tomato) and continue to cook 10-15 minutes longer.
Mix cream cheese, sour cream and sausage mixture in a large pot or crock pot & simmer until well blended. The longer it sits, the hotter it will be, so it’s good to cook it the night before, or cook it on low all night.

Prime Rib Recipe
If anyone has ever wanted to make prime rib, but thought it was too difficult, I am putting the recipe out here so you can see how easy it really is. Two keys to good prime rib.
1. Get a rib eye roast (or prime rib roast). The New York style loin roasts are not the same thing, but can be used if you can't find anything else.
2. Get a meat thermometer. I take mine out of the oven when the thermometer is almost to medium rare, but not quite. It will cook more as it sits and rests, so you want to take it out a little earlier than you think. (the recipe below tells you the correct temp)
Here's the recipe. (from Food Network) Enjoy!!!
Ingredients
1 (3-rib) standing rib roast (7 to 8 pounds)
1 tablespoon kosher salt
1 1/2 teaspoons freshly ground black pepper
Mustard Horseradish Sauce, recipe follows
Directions
Two hours before roasting, remove the meat from the refrigerator and allow it to come to room temperature.
Preheat the oven to 500 degrees F (see note). Place the oven rack on the second lowest position.
Place the roast in a pan large enough to hold it comfortably, bone-side down, and spread the top thickly with the salt and pepper.
Roast the meat for 45 minutes. Without removing the meat from the oven, reduce the oven temperature to 325 degrees F and roast for another 30 minutes. Finally, increase the temperature to 450 degrees F and roast for another 15 to 30 minutes, until the internal temperature of the meat is 125 degrees F. (Be sure the thermometer is exactly in the center of the roast.) The total cooking time will be between 1 1/2 and 1 3/4 hours.
Meanwhile, make the sauce.
Remove the roast from the oven and transfer it to a cutting board. Cover it tightly with aluminum foil and allow the meat to rest for 20 minutes. Carve and serve with the sauce.
Note: Be sure your oven is very clean before setting it at 500 degrees F.
Mustard Horseradish Sauce:
1 1/2 cups good mayonnaise
3 tablespoons Dijon mustard
1 1/2 tablespoons whole-grain mustard
1 tablespoon prepared horseradish
1/3 cup sour cream
1/4 teaspoon kosher salt
Whisk together the mayonnaise, mustards, horseradish, sour cream, and salt in a small bowl.

Hand in the cookie jar
Aaron is home today with Bailey. He said Bailey was playing a game where she would pull everything out of some kitchen drawers and then put them back in again.
While Aaron was out of the room for a minute, Bailey became very quiet. Aaron went in to check on her and this is what he found.
Somehow she figured out how to take the lid off her blueberry puffs and was fishing around the bottom of the container to get the last few out. How cute is that????
